Steak Fajita Bowl

This Steak Fajita Bowl brings the bold flavor you crave, with the macros that actually move the needle. Lean, juicy steak delivers the high-quality protein your body needs to build and maintain muscle, especially in midlife when strength is non-negotiable. Sautéed peppers, onions, and spinach bring antioxidants, fiber, and vibrant flavor, no rice or blood sugar crashes in sight.

 

Ingredients: Makes 2 Servings

  • 8 oz flank steak
  • 1 bell pepper, sliced
  • 1/2 red onion, sliced
  • 1 cup spinach
  • 1 tsp olive oil
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp chili powder
  • Salt & pepper
  • 2 tbsp Spicy Avocado Lime Dressing (see recipe)

 

Directions

  • Sauté bell pepper and onion in olive oil with seasonings until soft. Add spinach and cook until wilted.
  • Grill or pan-sear steak to desired doneness. Rest, slice thin.
  • Serve steak over sautéed vegetables. Add avocado lime dressing if desired.
