Steak Fajita Bowl

Ingredients: Makes 2 Servings
- 8 oz flank steak
- 1 bell pepper, sliced
- 1/2 red onion, sliced
- 1 cup spinach
- 1 tsp olive oil
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1/4 tsp chili powder
- Salt & pepper
- 2 tbsp Spicy Avocado Lime Dressing (see recipe)
Directions
- Sauté bell pepper and onion in olive oil with seasonings until soft. Add spinach and cook until wilted.
- Grill or pan-sear steak to desired doneness. Rest, slice thin.
- Serve steak over sautéed vegetables. Add avocado lime dressing if desired.
