Ingredients: Makes 4 Servings
- 1.25 lb grilled chicken breast, sliced
- 1 tbsp olive oil
- 1 tsp dried oregano
- Juice of 1/2 lemon
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, sliced
- 4 cups chopped romaine
- 2 tbsp Roasted Red Pepper Feta Sauce (per plate - see recipe)
Directions
- Marinate chicken in olive oil, oregano, lemon, salt, and pepper for 15–30 min. Grill or pan-cook until internal temp is 165°F. Slice.
- Toss cucumber, tomato, and onion with lemon juice and salt.
- Layer romaine, grilled chicken, salad mix, and drizzle with 2 tbsp red pepper feta sauce.
