Chicken Veggie Skillet + Avocado Lime Drizzle

This Chicken Veggie Skillet with Avocado Lime Drizzle is a go-to reset meal that keeps things light, lean, and insanely effective. High-protein chicken and eggs give your metabolism the boost it needs to burn fat and build strength, while cauliflower rice, carrots, and spinach add volume, fiber, and the micronutrients your midlife body thrives on. It’s quick to make, easy to digest, and topped with a creamy, zesty drizzle that makes clean eating feel like anything but a chore.

 

Ingredients: Makes 2 Servings

  • 6 oz cooked chicken breast, cubed
  • 1 egg + 1/2 cup egg whites
  • 1 cup spinach
  • 1/2 cup shredded carrots
  • 1/2 cup cauliflower rice
  • 1 tsp olive oil
  • 1/4 tsp turmeric (optional anti-inflammatory boost)
  • Salt & pepper
  • 2 tbsp Spicy Avocado Lime Dressing (see recipe)

 

Directions

  • Heat olive oil in skillet. Sauté carrots and cauliflower rice 4–5 mins. Add spinach and cook 1 min.
  • Stir in diced chicken. Push mix to side and scramble egg + whites on other half of skillet.
  • Combine everything, season with turmeric, salt, pepper. Top with dressing to finish.
