Meatballs:
12oz lean ground turkey (93% lean)
1 small zucchini, grated and squeezed dry
2 egg
2 tbsp almond flour
2 clove garlic, minced
Italian seasoning, salt, pepper
Cauliflower Mash
14oz steamed cauliflower
1 tbsp butter or ghee
Salt, garlic powder
Directions
Make meatballs: Combine turkey, zucchini, egg, almond flour, garlic, and seasonings. Roll into 1.5-inch balls.
Bake or air fry: Bake at 375°F (190°C) for 18–20 minutes, or air fry for 12–14 minutes until golden and cooked through.
Steam cauliflower: Cook cauliflower until fork-tender (steam for 10 min or microwave 5–6 min with a splash of water).
Mash it: Blend or mash cauliflower with butter, garlic powder, and salt until smooth.
Plate meatballs over mash and sprinkle with fresh herbs if you’re feeling fancy.
