Ingredients: Makes 2 Servings
- 12 oz grilled sirloin steak, trimmed
- 6 cups mixed greens
- ½ avocado, sliced
- ½ cup cherry tomatoes, halved
- ¼ red onion, thinly sliced
- ¼ cucumber, sliced
Balsamic Dressing:
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 1 garlic clove, minced
- Salt & pepper, to taste
Directions
- Season steak with salt and pepper. Grill over medium-high heat for 4–5 minutes per side for medium-rare, or to your preferred doneness. Let rest for 5 minutes, then slice thinly against the grain.
- In a small bowl, whisk together balsamic vinegar, Dijon mustard, garlic, salt, and pepper. Slowly whisk in olive oil until well combined.
- In two large bowls, divide mixed greens, tomatoes, cucumber, red onion, and avocado slices. Top each with 6 oz of steak.
- Drizzle with half the vinaigrette per salad and serve immediately.
