Shrimp Egg Roll in a Bowl

This Shrimp Egg Roll in a Bowl is fast, flavorful, and made to fuel fat loss without sacrificing satisfaction. High-protein shrimp and eggs deliver the muscle support and appetite control your midlife metabolism needs, while sautéed cabbage and carrots bring fiber, crunch, and hormone-friendly nutrients to the plate. A dash of sesame oil and coconut aminos gives it that takeout-style flavor, minus the sugar, bloat, or regret.

 

Ingredients: Makes 2 Servings

  • 8 oz shrimp
  • 2 cups coleslaw mix (red & white cabbage + carrots)
  • 2 eggs
  • 1 tbsp coconut aminos
  • 1 tsp sesame oil
  • 1 garlic clove, minced
  • 1/2 tsp ground ginger
  • Pinch red pepper flakes
  • Salt & pepper

 

Directions

  • Heat sesame oil in a skillet over medium. Add coleslaw, garlic, ginger, and red pepper flakes. Stir-fry for 3–4 mins.
  • Add shrimp and cook 2–3 mins per side until pink and opaque.
  • Push mixture aside. Crack in eggs, scramble until just set, then mix everything together.
  • Add coconut aminos, stir, and serve hot.
