- 8 oz shrimp
- 2 cups coleslaw mix (red & white cabbage + carrots)
- 2 eggs
- 1 tbsp coconut aminos
- 1 tsp sesame oil
- 1 garlic clove, minced
- 1/2 tsp ground ginger
- Pinch red pepper flakes
- Salt & pepper
Directions
- Heat sesame oil in a skillet over medium. Add coleslaw, garlic, ginger, and red pepper flakes. Stir-fry for 3–4 mins.
- Add shrimp and cook 2–3 mins per side until pink and opaque.
- Push mixture aside. Crack in eggs, scramble until just set, then mix everything together.
- Add coconut aminos, stir, and serve hot.
