Ingredients: Makes 2 Servings
- 10 oz chicken breast
- 4 wedges green cabbage
- 1 tbsp olive oil
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/4 tsp thyme
- Salt & pepper
- 2 tbsp Dijon Apple Cider Vinaigrette (see recipe)
Directions
- Preheat oven to 400°F. Drizzle cabbage wedges with half the olive oil, thyme, salt, and pepper. Place on sheet pan.
- Season chicken with garlic powder, paprika, salt, and pepper. Place next to cabbage. Roast for 25–30 minutes.
- Slice chicken and serve with roasted cabbage. Drizzle with vinaigrette.
