Ingredients: Makes 2 Servings
- 12 oz grilled chicken breast
- 1.5 cups roasted sweet potato cubes
- 1 cup roasted broccoli
- 2 cups fresh spinach or arugula
Lemon Dijon Dressing:
- 2 tbsp olive oil
- 1 tbsp fresh lemon juice
- ½ tsp garlic powder (or 1 small clove minced)
- ¼ tsp Dijon mustard
- Salt & pepper to taste
Directions
- Grill 12 oz chicken breast with salt and pepper until fully cooked (165°F). Let rest and slice into strips (6 oz per serving).
- Roast 1.5 cups sweet potato cubes at 400°F for 25–30 min with olive oil, salt, and pepper until tender and golden.
- Roast 1 cup broccoli in the same oven for 15–20 min until slightly crisped.
- Whisk dressing: 2 tbsp olive oil, 1 tbsp lemon juice, ½ tsp garlic powder (or 1 clove minced), ¼ tsp Dijon mustard (optional), salt and pepper.
- Assemble 2 bowls: each with 1 cup spinach/arugula, ¾ cup roasted sweet potatoes, ½ cup roasted broccoli, and 6 oz grilled chicken.
- Drizzle half the dressing over each bowl before serving.
