Ingredients: Makes 2 Servings
10 oz grilled chicken breast
7 oz roasted sweet potato
4 oz cooked quinoa
2 oz baby spinach
3 oz avocado
2 tbsp olive oil + 2 tbsp lemon juice
Salt, pepper, garlic powder, paprika to taste
Directions
- Roast the sweet potato: Toss diced sweet potato with a little olive oil, salt, and paprika. Roast at 400°F (200°C) for ~25 minutes, flipping halfway.
- Grill or pan-sear the chicken: Season chicken breast with salt, pepper, garlic powder, and paprika. Cook in a skillet over medium-high heat for 5–6 minutes per side or until fully cooked. Let rest, then slice.
- Assemble the bowl: In a bowl, layer quinoa, spinach, roasted sweet potato, avocado, and sliced chicken.
- Drizzle with dressing: Mix 2 tbsp olive oil + 2 tbsp lemon juice. Pour over the bowl.
