Garlic Shrimp + Butternut Mash + Kale Chips

Ingredients: Makes 2 Servings
- 8 oz shrimp
- 1.5 cups butternut squash, peeled and cubed
- 2 cups kale
- 1 tbsp olive oil (divided)
- 1 tsp garlic powder
- ½ tsp paprika
- Salt & pepper
Directions
- Steam or roast squash until soft (~15 mins). Mash with salt, garlic powder, and 1/2 tsp olive oil.
- Toss kale with 1/2 tbsp olive oil and a pinch of salt. Bake at 350°F for 10–12 mins until crispy.
- Sauté shrimp in remaining oil with garlic powder and paprika 4–5 mins.
- Serve shrimp over mash with kale chips on the side.
