Garden Power Protein Salad

 

This Garden Power Protein Salad is a nutrient-dense powerhouse that fuels your body with everything it needs to thrive—especially in midlife. Packed with fiber-rich kale, raw Brussels sprouts, and colorful veggies, it delivers serious crunch, antioxidants, and gut-loving greens. Lemon pepper grilled chicken adds lean protein to support muscle tone and energy, while hemp and pumpkin seeds provide healthy fats and minerals that keep hormones happy. The creamy lemon herb dressing ties it all together with fresh, zesty flavor and a touch of natural sweetness. It’s clean, satisfying, and proof that real results start with real, simple food that works.

 

Ingredients: Makes 2 Servings

  • 2 cups chopped kale or Swiss chard (massaged with a tiny bit of olive oil)
  • 1/2 cup shredded raw Brussels sprouts
  • 1/2 cup roasted broccoli
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup shredded carrots
  • 1/4 cup chopped cucumber
  • 4 oz grilled chicken breast (lemon pepper seasoned)
  • 1 tbsp hemp seeds
  • 1 tbsp pumpkin seeds

 

CREAMY LEMON HERB DRESSING

  • 1 tbsp plain Greek yogurt (or dairy-free yogurt)
  • 1/2 tbsp olive oil1/2 tbsp lemon juice
  • 1/2 tsp Dijon mustard
  • 1/2 tsp honey or maple syrup
  • 1 tbsp chopped fresh herbs (dill, parsley, or basil)
  • Pinch of garlic powder
  • Salt & pepper to taste

 

Directions

  • Roast the Broccoli: Toss chopped broccoli in a little olive oil and roast at 400°F for 15–20 minutes.
  • Prep the Greens: Massage the kale or Swiss chard with a touch of olive oil to soften.
  • Cook the Chicken: Grill or sear 4 oz chicken breast with lemon pepper seasoning until done.
  • Slice.Make the Dressing: Whisk all ingredients together in a small bowl.
  • Assemble the Salad: In a bowl, combine greens, Brussels sprouts, broccoli, tomatoes, carrots, cucumber, and chicken. Top with seeds. Drizzle with dressing and toss gently.
