- 4 large eggs
- 3/4 cup egg whites
- 2 cups baby spinach
- 1 cup cauliflower rice
- 3 oz pre-cooked chicken sausage, sliced thin
- 1 tsp olive oil
- 1/2 tsp onion powder
- 1/4 tsp smoked paprika
- Salt & pepper to taste
Directions
- Heat a large nonstick skillet over medium heat. Add olive oil and cauliflower rice. Cook 2–3 minutes.
- Add chicken sausage to the pan. Sauté until slightly browned, about 2–3 minutes.
- Add spinach and stir until wilted, 1–2 minutes.
- In a bowl, whisk together the eggs and egg whites with spices and seasonings.
- Pour into skillet and gently scramble everything together until eggs are just set but still moist. Don’t overcook.
