Chicken Egg Veggie Hash with Avocado

This Chicken Egg Veggie Hash with Avocado is the kind of meal that keeps you full, fueled, and focused, without weighing you down. It’s packed with lean protein from eggs and chicken breast to support lean muscle and satiety, while sautéed veggies like cauliflower, carrots, and kale give your gut and hormones the fiber and nutrients they’re craving in midlife. A touch of creamy avocado adds healthy fats that keep blood sugar steady and cravings low.

 

Ingredients: Makes 2 Servings

  • 6 oz cooked chicken breast, diced
  • 3/4 cup egg whites
  • 1 whole egg
  • 3/4 cup cauliflower rice
  • 1/2 cup shredded carrots
  • 1/2 cup chopped kale
  • 1/4 avocado (about 1 oz)
  • 1 tsp olive oil
  • 1/2 tsp garlic powder
  • Salt & pepper to taste

 

Directions

  • Heat a large nonstick skillet over medium heat. Add olive oil, cauliflower rice, shredded carrots, and kale. Sauté for about 5–6 minutes, stirring occasionally, until veggies are tender.
  • Add in the diced chicken and continue cooking for another 2–3 minutes until heated through.
  • Push everything to the side, then pour egg whites and whole egg into the empty side. Scramble until just cooked, then combine with veggie-chicken mix.
  • Top each serving with 2 tablespoons sliced avocado. Season with additional salt, pepper, or crushed red pepper if desired.
